We first select the best grapes during vine harvest, than once they reach the winery the stalks are removed from the grapes and next it undergoes a soft pressing. Alcoholic fermentation develops in concrete tanks at an avarage temperature of 28 degrees centigrade. The grapes maceration goes on for 20 days and then wine is decanted in new french oack barrels where the second fermentation takes place. The barrel refining lasts four months approximately; at this point wine is ready for the bottling and the refining in the bottle goes on for five more months bifore it is brought on to the market. |
